Abstract

The post-COVID-19 pandemic condition necessitates critical, creative, and innovative initiatives to address development challenges, including waste management and improving community welfare. This Community Service Program (CSP) aimed to empower the community in Region 6, Mena Village, Compang Tuke Sub-district, Manggarai Regency, through a training program on processing leftover rice waste. This study employed a qualitative approach with a participatory method. The activities were conducted in three main stages: Socialization on the importance of organic waste management, technical training that taught practical and easy methods to make crackers from leftover rice using simple ingredients, monitoring and evaluation to measure the impact on community awareness and local economic potential. The results showed that the program successfully enhanced the community's creativity in processing household waste into products with commercial value. Furthermore, this initiative also succeeded in creating new business opportunities based on local food resources. Overall, this activity can serve as a sustainable model for organic waste management.
